This super quick and super healthy smoothie is the perfect way to kick-start your little one's day. Naturally vegan and gluten free, this creamy blend of tropic fruits and flavours comes jam-packed with vitamins and nutrients.
Whip up a jar of this as a refreshing drink on a hot summer's day, or serve this as a delicious breakfast to brighten up those colder mornings and help keep the sniffles at bay!
SMOOTHIE INGREDIENTS
(makes 1 serving)
- Mango, ripe, 1 cheek, peeled and chopped
- Frozen pineapple, ¼ cup
- Butternut squash, peeled and chopped, steamed, ½ cup
- White chia seeds, 1 tsp
- (optional) small piece of fresh turmeric root, peeled OR a pinch of turmeric powder
- Coconut milk (light, from carton), ½ - ¾ cup, depending on desired thickness
METHOD
- Add all ingredients to a blender and blend on high until completely smooth.
- Pour into a glass (optionally decorate with a sprinkle of shredded coconut) and serve.
PUREÉ INGREDIENTS
(makes 1 serving)
- Mango, ripe, 1 cheek, peeled and chopped
- Frozen pineapple, ¼ cup
- Butternut squash, peeled and chopped, steamed, ½ cup
- White chia seeds, 1 tsp
- (optional) small piece of fresh turmeric root, peeled OR a pinch of turmeric powder
- Coconut yogurt (sub low fat Greek yogurt), 2 tbsp
METHOD
- Blend all ingredients with an immersion blender into smooth cream.
- Transfer to a cup or bowl, optionally decorate with chopped ripe mango, shredded coconut and/or chia seeds, and serve.
